Cooking en papillote (French for “in parchment”) may seem daunting, but it’s actually one of the healthiest ways to prepare meat, fish and vegetables. This cooking technique involves steaming your food inside a parchment pouch with herbs and spices that infuse flavor without requiring oil or butter. You may not get that beautiful browning that you would with other cooking methods, but it’s worth the calories you’ll save by not having to use a fat.

Love this video. I think I might have tried en papillote cooking once a long time ago, but I’ve got to give it a try again. This looks so delicious! I love how easy it is and especially how easy the clean-up is afterwards!

I tried it once too with tilapia and I remember it turning out amazing! I love that it’s a completely fat-free cooking method, and yes, easy clean up is always a plus
