We LOVE What I Ate Wednesday, a weekly food diary “party” hosted by one of our favorite bloggers, Jenn of Peas and Crayons. What I Wish I Ate Wednesday is Healthy Way to Cook’s roundup of the best What I Ate Wednesday posts from the previous week.

This is the first WIWIAW featuring posts from 2013! These bloggers are already starting off their new year the healthy way with some great eats and recipes:

Healthy Life Happy Wife‘s Alex shared her New Year’s Eve eats. She claimed her meals and snacks were random because she was sick, but I still think everything looked delicious, especially the matzo ball soup (perfect sick food!). I’m really intrigued by the Trader Joe’s blueberry vanilla chevre she had–as an avid goat cheese lover, that’s definitely something I’m going to have to try.

Sarah of Ingredients of a Fit Chick was really proud of the way she started 2013: a 4-mile run, a back/biceps workout and tons of fresh, clean foods. I loved her colorful veggie-filled meals of a tuna & avocado salad with roasted kabocha, and spaghetti squash with meatballs and ricotta. She reminded me of how long it’s been since I’ve had squash, which must change immediately.

Cecilia, one half of the Mommies Run blog, raved about her protein-packed eats of the day, including peach Chobani (one of my personal favorites!) topped with Protein Plus Special K, and black beans & rice with salsa and guacamole. As part of Healthy Heddleston’s “Start Clean 2013” challenge, she ate a salad for dinner to go with her chicken wings. Best of luck to all participating!

Kristen, the blogger behind Verbs and Vignettes posted a collection of photos of meals throughout December, like eggs with soy pepperoni and Scharffen Berger semisweet chocolate. She shared a recipe for her delicious brown rice breakfast bowl with soy milk and almonds and a quick and healthy “frosting” made with whipped topping and sugar-free, fat-free pudding mix. Sometimes the simplest recipes are the best–I never would have thought to turn Cool Whip (yes, I am pronouncing that as ‘Cool Hwhip‘ in my head) and pudding mix into a tasty, fat-free cake filling!
